Stuffed Bell Peppers

My husband LOVES stuffed peppers myself i personally just like the filling lol but these are a big hit in my house! Its a very simple recipe and you can add what you like i always put jalapenos and banana peppers in the bottom of my peppers and i add onions to the hubby's peppers since i don't like them, its a good meal to customize for the picky eaters in your house! 

as you can see 2 of these have onions on the top that way i would know what ones had onions inside :) 

What you will need:
(this makes six peppers)
                                                                                                
1 poundground beef
1/2 cupuncooked long grain white rice
1 cupwater
green bell peppers
2 canstomato sauce
1 tablespoonWorcestershire sauce
1/4 teaspoongarlic powder
1/4 teaspoononion powder; to taste
1 teaspoonItalian seasoning

Directions:
Preheat oven to 350 degrees F (175 degrees C).
Place the rice and water in a saucepan, and bring to a boil. Reduce heat, cover, and cook 20 minutes. In a skillet over medium heat, cook the beef until evenly browned.
Remove and discard the tops, seeds, and membranes of the bell peppers. Arrange peppers in a foil lined baking dish with the hollowed sides facing upward. (Slice the bottoms of the peppers if necessary so that they will stand upright.)
In a bowl, mix the browned beef, cooked rice, 1 can tomato sauce, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Spoon an equal amount of the mixture into each hollowed pepper. Mix the remaining tomato sauce and Italian seasoning in a bowl, and pour over the stuffed peppers.
Bake 1 hour in the preheated oven, basting with sauce every 15 minutes, until the peppers are tender.

Strawberry Jello Pie

I found this recipe online BUT i didnt like how you had to do it lol so i just simply changed it and it came out really good hubby said it tastes like a strawberry short cake :) so its something different to try and that's always a good thing in my book! Hope you like this super easy desert! if you try it let me know how you like it! 


Looks Yummy Right?

What you will need:

1 pre baked regular pie shell 
(follow the directions on the package on how to bake an empty pie shell super easy! )
1 small box of strawberry jello 
2 cups sliced fresh strawberries 
1/2 cup of sugar 
1/2 cups HOT water 
1/2 cup cold water 
Cool whip (spray kind or tub whatever you would like)

Directions:
Pre bake pie shell as directed on the package 
slice your strawberries and arrange them in the cooled pie shell 
mix together the sugar hot water and jello mix dissolve 
add cold water and combine 
pour mixture over the top of the strawberries 
refrigerate until set takes a few hours 
apply cool whip just before serving!

Lemon Dream Cake

Its been a while since I have posted anything Life has gotten away from me the past couple of weeks BUT I did try a couple new recopies and this is one of them, I liked it the nice thing about this you could make it with whatever you like you could change the cake mix, pie filling, and icing to whatever you and your family likes, I love lemon so i thought i would try it the way the original recipe said can wait to try other combinations! 



What you will need:
1 (18.25 oz.) box French Vanilla Cake Mix

ingredients needed to make cake (eggs, oil and water)
1 (15.75 oz.) can lemon pie filling
1 tub lemon flavored frosting
1 ( 8oz.) tub whipped topping, thawed


Directions: 
Preheat oven to 350F degrees
Spray a 9x13 baking dish with nonstick cooking spray (I like the kind that has flour in it).

Prepare cake mix as directed on the back of the box.
Pour batter into baking dish.

Place spoonfuls of lemon pie filling all over the batter.

Take a knife and swirl it all around to help evenly distribute it better.

Note: The lemon pie filling is heavier than the cake batter. So it will sink to the bottom of the cake as it is cooking. 
Don't worry, it won't burn. This is normal.

Bake at 350F degrees (in center rack) for about 35-40 minutes.
Until it springs back to the touch and isn't jiggly in the center.

Let cake cool completely before proceeding to the next step.

In a bowl, combine lemon flavored frosting with whipped topping.

Mix until thoroughly combined.
You can do this by hand or with an electric mixer.
It actually comes together pretty easily by hand, but it's up to you.

Spread frosting over cooled cake.

Refrigerate until chilled and keep any leftovers refrigerated.

Classic Stuffed Shells

This is a fun recipe to make takes a little time and you get a little messy but I don't mind at all :) This is a huge hit with my family they dont last very long the nice thing is this usually makes enough to serve 4 then have leftovers for the next day for lunch! you can add or subtract what you do or don't like, I usually don't do the parsley i just add dried italian seasoning to mine and they are just fine but if you want to use parsley then by all means go right on ahead! I do not have a photo of the last time i made this it slipped my mind to take a photo so here is a stand in one to give you an idea of what the dish looks like ill upload one the next time i make this 



What you will need:

 1 jar (1 lb. 8 oz.) Ragu® Old World Style® Pasta Sauce
1 small tub of  ricotta cheese (ive made this with 4 oz of cream cheese before and it was great so its whatever you prefer or have on hand) 
1 to 2 lbs hamburger 
2 cups shredded mozzarella cheese (about 8 oz.)
1/4 cup grated Parmesan cheese
1 package (12 oz.) jumbo shells pasta, cooked and drained

What to do:
Preheat oven to 350°. Evenly spread 1 cup Pasta Sauce in 13 x 9-inch baking pan; set aside.
Brown off hamburger until done 
Par cook your pasta shells til they are flexible but not limp 
lay out the shells on a cookie sheet to cool so you can handle them 
Combine a 1/4 cup of the sauce the cheese (save some shredded for the top) and the hamburger together
Fill shells with cheese mixture, then arrange in baking pan.
 Evenly top with remaining Pasta Sauce. 
Add remaining  shredded cheese to the top 
Bake 45 minutes or until sauce is bubbling.

Edible Easter Baskets

I made these a few years ago for an Easter church function and it was a huge hit with the kids and adults alike I really need to make these again they were very good! Not to mention they are ADORABLE! I'm uploading two photos here the first one is from the actual recipe and the other is how they actually came out you know how that can be sometimes they hardly ever look exactly like the professional recipe!

What you will need:

1 package about 18 oz refrigerated sugar cookie dough 
1 cup M&M's milk chocolate mini baking bits 
1 teaspoon water
1 to 2 drops green food coloring
3/4 cup sweetened shredded coconut
3/4 cup any flavor frosting 
1 package red licorice whips cut into 3 in lengths

What to do:  

 Lightly grease 36 (1-3/4-inch) mini muffin cups. Cut dough into 36 equal pieces; roll into balls. Place 1 ball in each muffin cup. Press dough onto bottom and up side of each muffin cup; chill 15 minutes. Press 1/3 cup "M&M's"® Milk Chocolate Mini Baking Bits into bottoms and sides of dough cups. Preheat oven to 350°F. Bake cookies 8 to 9 minutes. Cookies will be puffy. Remove from oven; gently press down center of each cookie. Return to oven 1 minute. Cool cookies in muffin cups 5 minutes. Remove to wire racks; cool completely. In medium bowl combine water and food coloring. Add coconut; stir until evenly tinted. In each cookie cup, layer 1 teaspoon frosting, 1 teaspoon tinted coconut and 1 teaspoon "M&M's"® Milk Chocolate Mini Baking Bits. Push both licorice ends into frosting to make basket handle. Store in tightly covered container.



Caramel Cinnamon Roll Monkey Bread

I had a recipe for Monkey Bread with Caramel and I made that one it was pretty good, then my sister had given me some cinnamon rolls and I got to craving that monkey bread again so instead of using regular biscuits I used the cinnamon rolls and OH MY it was yummmy it turned out much better than I thought it would, so you can use either biscuits or cinnamon rolls in this recipe its up to you! 


What you will need:
3/4 cup granulated sugar
2 teaspoons ground cinnamon
4 cans of biscuits or cinnamon rolls 
1/2 cup butter or margarine, melted
3/4 cup packed brown sugar

Directions:
You can either use a baking dish the ones in the picture are 8x8 i believe or you can use a bunt pan 
foil line your pans you will be using and spray with cooking spray 
mix sugar and cinnamon in a large freezer bag 
separate the rolls or biscuits 
cut each one into quarters 
shake the quarters in the bag to coat 
place randomly into your pan 
Mix melted butter and brown sugar together and pour over the top 

Bake at 350 degrees for 40-45 minutes or until golden brown 
cool for 5 minutes
turn upside down onto a serving platter
if you use cinnamon rolls put the icing on top of the monkey bread

DO NOT LET THIS SIT AND COMPLETELY COOL THIS IS VERY STICKY 
you will have a mess on your hands if it cools completely!

Enchilada Pie

This one is a true family favorite I grew up on this and I love it still to this day everyone I have made it for falls in love with it. It tastes just like regular enchiladas BUT without all of the work! Give them a try and let me know what you think! Its sure to please the whole family! 



Makes my mouth water and brings back so many memories thats what food is all about to me! 

What you will need:
1 package corn tortillas
1-2 lbs of hamburger
1 package of your favorite taco seasoning
1 small can enchilada sauce 
1 package of shredded cheese (or shred your own) 


What to do:
preheat oven to 350
Cook up your hamburger just like you would for taco meat, drain grease add taco seasoning
put enchilada sauce in a large bowl add about a half a can of water 
dip corn tortillas into the enchilada sauce and layer them into a baking dish 
put a layer of taco meat on top of the tortillas
top the taco meat layer with a cheese layer 
repeat until all of the taco meat is gone
usually makes about 3 layers
Pour remaining enchilada sauce over the top
bake for 15 minutes or until bubbly 

you can top this with your favorite hot sauce or serve as is!
